 Sis Kebap

Ingredients:

  • 500 gr sheep meat
  • 250 gr beef meat
  • 1 tea spoon oregano
  • 1 tea spoon thyme
  • 1 big chopped onion
  • 1 egg
  • oil
  • salt
  • pepper
  • 1 jar mustard sauce "Kiveli" with tomatoes.

Preparation:

    Mince the sheep and beef meat. Mix well with your hands adding chopped onions, egg, oil, salt, pepper, making meat balls at the size of a walnut. Roll over the meat balls on the mixture of oregano and thyme and place them on the spits. Cook in the oven for 20 min. at 190oC. Served hot with lemon, wild rice, chopped onions, paesley and sread on top mustard sauce "Kiveli" with tomatoes.

Served:

    Served as main meal, as meze, buffet.

 Risotto with ham.

Ingredients:

  • 250 gr. rice for risotto
  • 100gr. ham
  • 8 small sausages
  • 1 onion
  • 1 can tomato juice
  • 1 gr saffron
  • 2 table spoon olive oil
  • 50 gr. grated parmezan or ginger
  • salt
  • pepper
  • 1 jar chutney "Kiveli" with apricot & honey  or 1 jar mustard's sauce with moushrooms

Preparation:

     Cut the ham in pieces and place them in a casserole, we containing hot olive oil. Then add the saysages and the cropped onion. When becames brown we add the rice and stir it well, adding twice the volume of rice water, tomato juice, saffron, salt, pepper and let it cook for 25 min at 160oC.

Served:

    As main meal on its own or with neat. Adding on top grated parmezan and the jar of chutney "Kiveli" with apricot & honey or mustard's sauce with moushrooms..

 Stuffed Crepes

Ingredients:

  • 250 gr flour
  • 250 ml milk
  • 3 eggs
  • butter

Preparation:                                                                                                                                                                                                                                                                         

Mix in a pot flour, milk and eggs. In a pan melt 1 tablespoon butter and then add portions of the mixture. In 1 - 2 min tip it over. Stuff the crepes or put them in the over spreading them with bechanel sauce.

Stuffing:

  1. With mustard sauce "Kiveli" with citrus and honey, rock, shrimps or smoked salmon.
  2. With saute spinach, gruyere and green olives pate "Kiveli" with finokio and dill.
  3. With prosciuto kaseri (kind of hard cheese) and chutney sauce "Kiveli" with apricots and honey.

 Chicken with vegetables and potatoes. 

Ingredients:    

  •  1 chicken 1500 gr
  • 1 kilo potatoes
  • 250 gr peas
  • 1 carrot
  • 250 gr corns
  • 1 bottle marinate "Kiveli"     
  • 1 jar mustard sauce "Kiveli" with citrus and honey    

Preparation:

        Spread the chicken with marinate sauce "Kiveli" on both sides using a brush and put it in a baking pan. Leave it in the fridge for 3 hours. Then add sliced potatoes, peas, carrot, corn and 5 - 6 soup spoon marinade sauce cover it with aluminium paper and place it in the oven. Cook for 45 - 60 min. at 200 oC.

Served:

    As main meal with mustard sauce "Kiveli" with citrus and honey.

  Beef burgers with " Mediterranean"spice paste "Kiveli"

Ingredients:

  • 1 kilo minced beef
  • 2 slices bread
  • 1 egg
  • 2 soup spoon olive oil
  • 1 jar  "Mediterranean" spice paste "Kiveli"

Preparation:

       Mix well minced beef, bread, egg, olive oil and the "Mediterranean" spice paste "Kiveli".  Make burgers 2 cm thickness, cook and serve hot with conscons or wild rice.

Served:

      As main meal with seasonal salad.

 Salmon fillets with vegetables and marinade sauce "Kiveli"

Ingredients:

  • 2 salmon fillets
  • 2 potatoes
  • 2 carrots
  • 2 Artichoke heartss
  • dill
  • lemon juice
  • 1 bottle marinade sauce "Kiveli"

Preperation:

       Spread with brush the salmon fillets, on both sides with 30 ml marinade sauce "Kiveli" and place them on a baking pan. Put it in the fridge for at least 1 hour. Take the baking pan out and add sliced potatoes, carrots, artichoke hearts, lemon juice, dill, 2 - 3 soup spoon water, cover it with aluminium foil and place it in the oven. Cook for 40 - 45 min. at 200oC.

Served:

       As main meal.

  Lamb in the oven with rosemary, fennel and oregano

Ingredients:

  • 1/2 lamb about 3 - 4 kgs
  • 2  pieces of garlic (pulp)
  • 2 twings of rosemary
  • 2 twings of fennel
  • 2 twings of oregano
  • 2 lemon's juice
  • salt
  • pepper
  • 1 jar mustard' s sauce Kiveli with capper and oregano

Preparation:

     Wash well the meat. Then spread it with the garlic pulp, the lemon's juice, salt and pepper. Add the twings of rosemary, fennel,oregano and wrap the meat with all the ingredients in oil - paper and cook it in the oven at 200 C for about 2 hours.

Served:

      It served with oven potatoes, lettuce salad and mustard' s sauce Kiveli with capper and oregano.

 Penne with Kalamat's black olives' pate with basil and garlic "Kiveli"

Ingredients:

  • 250 gr Penne
  • 50 gr butter
  • cheese
  • 1 jar kalamat's black olives'pate with basil and garlic "Kiveli" 1 jar chutey with vegetables
  • nutmeg

Preparation:

        Boil penne in salter water with 1 s. sp. of olive oil for 12 -15 min.Drain, add butter to the pasta and kalamata's black olive's pate with basil and garlic "Kiveli" or chutney with vegetables and serve adding cheese and fragments of nutmeg.

Served:

        Served as first plat, as main dish, supper and buffet.

  Turkey cooked in oven with orange, rosemary, pimento and ginger.

Ingredients:

  • 1 Turkey 4 - 5 kg
  • 2 oranges
  • 100 gr butter
  • 1 piece of garlic
  • 250 ml white wine
  • 250 ml vegetables' broth
  • 50 gr flour
  • 3 soup spoon " Kiveli " mustard's sauce with caper and oregano
  • 6 cloves
  • 2 - 3 twigs of rosemary

Preparation:

         First we wash the turkey very well. Then we pin the six cloves on the first orange and we place it inside the turkey together with the twigs of rosemary and the piece of garlic. Pour over the turkey, with the melted butter and the juice of the second orange, we add salt, pepper and the ginger and we place the turkey in a pot. We pour over the white wine, we cover the pot and we put it in the oven. We cook for 3 - 4 hrs at 180oC. When the turkey is ready we place it in a platter. Then we take the turkey broth and mix it with the vegetables' broth. Adding spices and flour and stir until it gets thicker. At the end we add "Kiveli "  mustard's sauce and pour it over the turkey. We decorate the platter with orange's slices,small french potatoes, prunes, apricots and chestnuts.

 Onion tart with mustard's sauce with radish and rock "Kiveli "

Ingredients:

Tart:

  • 250 gr flour
  • 120 gr butter
  • salt
  • 80 gr water

Filling:

  • 4 -5 onion rings
  • 50 gr butter
  • 2 soup spoon mustard's sauce with radish and rock "Kiveli "
  • pimento
  • rosemary
  • salt
  • pepper
  • 2 eggs 
  • 250 gr cheese crumbs

Preparation:

     First prepare the tart by mixing the flour, the butter, the salt and the water. Leave the mixture to rest for an hour in the fridge. Spread a little flour on the tart dish and then cover the dish with the tart. In a different pan we slightly cook the onion rings until becomes brown, adding salt, pepper, pimento, rosemary and two soup spoons of mustard'sauce with radish and rock "Kiveli "Transfer this mixture on the tart and cover it with cheese crumbs and stired eggs. Cook in the oven at 180 C for 30 minutes.

Served:

      Served hot, as main meal or in a buffet.

 Stuffed tomatoes with tuna and "Kiveli " green olives' pate.

Ingredients:

  • 7 small tomatoes
  • 60 gr tuna fish with olive oil
  • 1 jar "Kiveli " green olives' pate
  •  persil

Preparation:

     Cut the top side of the tomatoes and remove the internal seeds. Cut the tuna fish in small pieces and mix it with the green olive's pate. Cut persil in small pieces. Use this mixture to fill the tomatoes. Place them on a dish and decorate them with persil.

Served:

       It's served cold as an appetite or in a buffet. It's also served as main meal.

 Greek salad with "Kiveli " black olive's pate

Materials:

  • 2 fresh tomatoes
  • 1 fresh cucumber
  • 1 fresh long green pepper
  • Few black olives
  • 1/2 dried onion
  • A piece of feta cheese
  • A piece of barley rusks or arabic pita or whole wheat bread slices,  spread  with "Kiveli " black olive's pate
  • 1 small spoon capers
  • 2 - 3 spoon extra virgin oil
  • 1 small spoon vinegar
  • Little oregano
  • Salt
  • 1 jar "Kiveli " green olives' pate

Preparation:

     In a deep plate, cut the tomatoes, the cucumber, the pepper, the onion in slices. Add capers, oregano, olives and  salt. Stir the ingredients with 2 big spoons. Transfer all the ingredients in a large dish and  put on top a piece ( or crushed) of feta cheese.  Around the dish, place the pieces of barley rusks or arabic pita or whole wheat slices,spreaded with "Kiveli " black olive's pate . At the end,  pour over the salad, extra virgin olive oil and vinegar. The salad is ready.

Served:

       This salad can be served as a quick meal, as first plate or can accompany the main meal.
